Contains compounds with medicinal properties
Much of garlic’s therapeutic acclaim is down to an active compound called allicin. This sulphur-containing compound gives garlic its pungent smell and distinctive taste. Luckily for us cooks, the action of chopping or crushing stimulates the production of allicin. But it is thought that the application of heat may inhibit some of the perceived medicinal properties, making it best to add garlic late in the cooking process.

The sulphurous compounds in garlic have been studied for their ability to inhibit cancerous cells and block tumours. Types of Garlic

Its long shelf life also comes in handy for storage purposes. Some common varieties of softneck garlic are silverskin and artichoke garlic.
Hardneck garlic: Hardneck garlic has a stiff stalk, or neck, running through the bulb. The flavor of hardneck garlic is more robust and spicier than softneck varieties. This type of garlic also has fewer cloves, approximately 6 to 12 per bulb. Hardneck garlic also has a longer growing season and is suitable for cold climates. Its strong flavor makes it ideal for roasting.
Elephant garlic: Elephant garlic is not a type of garlic but rather a member of the leek family. It has a milder flavor than other garlic types. However, it still has the same aromatic qualities as garlic. Elephant garlic bulbs are much larger than other garlic varieties. Their cloves also tend to be thicker. Elephant garlic is ideal for roasting and can be used to make garlic powder.
Black garlic: Black garlic is made from fermenting and aging white garlic bulbs over heat and moisture for several weeks. This process transforms the cloves into a deep black color. It also softens the cloves into a sticky consistency. The flavor of black garlic is sweet, tangy, and umami. It is also less pungent than raw garlic.
